Working to finish this issue amidst the chaos of the last few months, has been a rather stabilizing force. I longed to complete it and set it out and yet at the same time, life pulled me away from it. Even more, I felt an yearning to draw it out, to know that it was there to ground me. Ha! I know it sounds silly. But, until this weekend, I hadn't realized how much I was holding on to it like an adrift sailor to a piece of drift wood. It was then I had the epiphany! There is always the next issue!! ;-)

Gluten Free Peach Shortbread and Cookies

Albeit it is the Peach Shortbread, but really it is the multipurpose gluten free recipe for the shortbread that makes a great coffee cake as well as tea cookies! This one is a keeper, I promise!!
Peach and Mint Einkorn Scones for a Biscuit Benedict
I am obsessed with peaches this Summer! I am hoarding them every week from my farmers' market. I think they are particularly delicious this year! Both the white and yellow varieties. I think I am going to call it... 2015 is the year of Peaches! WOOT
Expectedly, I am overdosing on them as it, in smoothies, cakes, shortbreads, tarts, preserves, oh just sliced and one of my absolute favorites, scones!!!!
Chia Breakfasts with Summer Fruits
There is much to say about slow breakfasts, the kind where you take the time to construct a composed morning bite that is brimming with the inspiration of the season. There is even more to be said for ones that can be made in parts ahead of time and assembled at whim to recreate the feeling of slow inspired living.
Today's breakfast ideas are of the latter. Components made as you will and then layered the morning of for a spectacular indulgence in self! :)
Summer Landscapes and a No Churn Vanilla Bean Ice Cream
Summer is bright and hot and no one wants to do much work to get cool. The best thing to do is simply give in to the beautiful bounty that She gives us and indulge in the innocence of not doing much to them to relish the flavors. This no-churn ice cream, needs only about 10 minutes of work at the stove and little and less effort after. And you have a happy pint of frozen happiness to enjoy in a few hours time!
