Breakfast for the quick footed

Ahhhh to be a 2 year old! :) You get to sleep 12 hours plus a nap and play allllll day! And, you can eat literally every hour and have the energy to constantly run, run, run, and yet not be out of breath.

Meanwhile, I huff and puff just trying to keep up with her and keep her up! So much time seems to be spent in the act of getting her nourishment that it seemed we had regressed back to cave era when humans still spent most of their time finding food and feeding themselves. So one day I decided we would have breakfast that works with an active life - a.k.a. handheld, wholesome and filling! Enter these muffins - almond flour and oats for protein and filling your belly, cocoa and banana for depth of flavor and peanut butter and maple syrup for oomph.

Yes, we have a hit. It is a dump everything together, one bowl kind of thing that delivers so much more than the effort involved. Enough said. They were a runaway success really. :)

Cocoa + Almond + Oat Muffins

1/3 cup rolled oats

1/3 cup almond flour

1/3 cup regular flour

1 banana

3 T brown sugar

2 T maple syrup

1/4 cup olive oil

1 egg

2 T cocoa powder

6 tsp peanut butter

Preheat oven to 375F.

Mix all the ingredients, sans peanut butter, together.

Fill lined muffin pan halfway, dollop a teaspoon of peanut butter in each.

Top with the rest of the batter.

Bake for 40-45 mins till muffins are springy to touch.
