Eating Humble "Coconut" Pie

Let me start with the science.

People have been substituting everything from olive oil to milk and milk products with coconut driven ones. Coconut cream in place of whipped cream in desserts and ice creams; coconut oil instead of olive or vegetable oils and coconut sugar for cane sugar. These are certainly great experiments...  

Yet, last week, as I was preparing for my upcoming trip to Europe, I ran out of milk and yogurt for my morning breakfast. I also ran out of granols, which, isn't an issue, since I love oatmeal in the cold months. The only thing I had was half a can of thick coconut milk from a Asian curry evening. When You have the Balls...

Last weekend, I had a completely unexpected conversation. It began as a mild curiosity of the business end of things. I am always interested in how people and business sustain. So, I asked. More so, here is what I took away... It is really about HAVING THE F'ING BALLS TO BE VULNERABLE!!!

And, then there are these balls. Yeah. I am being all literal here. What with the topic and the recipe. These are amazing balls really. You need more of these literal ones (along with the figurative stuff above). They are all vegetarian (and seasonal), super flavorful and just so good for you and for your mind. Also, I am told it is much enjoyed by toddlers! :)

A Calling From County Kerry

British/Irish/Scottish cuisines suffer from a generalization of blandness. Meat and potatoes is the abject disdain with which the entire landmass food is painted. 

The reality is the stuff tastes so good to begin with, over there, that you need little more than salt and pepper to bring out the best in it! In the UK, despite the industrialization of agriculture, the average meat or produce tastes so much better than in the US.

Hop over to Ireland where many farms and fisheries are still family operated and backyard husbandry abounds, it is simply an insult to the ingredient to douse it in seasoning or sauce. The meat or vegetable shines in its own glory!

Oh and the potato... Ah the potato!

Let's get the red going...!!

This is truly one of the best creative times of the year. Between Super Bowl, Valentine's, Grammy's and the Oscars, there are so many reasons to come together as an online community and celebrate. And, there is such an explosion of awesomeness that it really is very, very hard to not be swept by it all. Even if one is an institutionalized skeptic! 

Today, I have a matcha pudding for you, served as a trifle with lemon cookies. I have an interesting relationship with matcha. And, well, I suppose green tea in general.
