Gluten Free Peach Pound Cake
I have for you, today, this wonderful loaf I had baked before I left for my travels. It is based on my gluten free adaptation of the Florentine sponge. You could say I was gearing up for my trip to Italy. But, really, I used that because it is one of the best cakes I have ever had to date as just a cake, one that needs no frills and certainly no icing. More importantly, it is a phenomenal recipe for going gluten free.

Sometimes you have to take a risk! So, I took a risk. I made myself this sandwich with a fish that I can't say I love. So, I am taking a risk. In posting photos of a whole fried fish, in all its possibly repulsive possible awe-inspiring glory. The first time in tasting was a worthy risk. This one, in posting, you tell me...! :)
I chose Sardine. I have said it before, they are not my favorite fish to eat as is, because of their rather pungent flavor; Like chicken liver. Actually, exactly like chicken liver!! I just had an Epiphany as I was typing this! That is probably why I like both of them in pates diluted with large amounts of butter and masking spices! Give me the fat and smooth spread without the stick-in-my-palate flavor.

Albeit it is the Peach Shortbread, but really it is the multipurpose gluten free recipe for the shortbread that makes a great coffee cake as well as tea cookies! This one is a keeper, I promise!!
Peach and Mint Einkorn Scones for a Biscuit Benedict
I am obsessed with peaches this Summer! I am hoarding them every week from my farmers' market. I think they are particularly delicious this year! Both the white and yellow varieties. I think I am going to call it... 2015 is the year of Peaches! WOOT
Expectedly, I am overdosing on them as it, in smoothies, cakes, shortbreads, tarts, preserves, oh just sliced and one of my absolute favorites, scones!!!!
Chia Breakfasts with Summer Fruits
There is much to say about slow breakfasts, the kind where you take the time to construct a composed morning bite that is brimming with the inspiration of the season. There is even more to be said for ones that can be made in parts ahead of time and assembled at whim to recreate the feeling of slow inspired living.
