Mondays to Sundays - Coconut Almond and Oat Waffles
Sundays have a symbolism. Probably different for different people but typically run along the lines of leisure, fun, family, connection, laid back, indulgent, happy.... you get the gist.
These waffles basically encapsulate all of those lovely feelings! So, you can essentially, insert a few minutes of Sunday into any day of your life!
Even better, they are completely gluten free and even the nittiest gluten lover will find little to be picky about it! Crisp on the outside and chewy in the center, they are lovely as Fall sets in...

Triple Berry Whopper Pannacotta
The perfect Summer dessert is one that requires little effort and delivers a lot of oomph. A pannacotta is a classic that despite much written about its ease always impresses people when done right. This recipe is a play on the joy of layers and depths - a parfait of berry jam and maple vanilla pannacotta topped with preserved berries and fresh blueberries. It is silky and smooth on the tongue, has just enough oomph to make you go all jelly inside and has a sweet finish that leaves you satiated and palate coated.

Almond Rhubarb Cake for Two
Rhubarb and Friday! It has been a long week and going to be not much of a weekend with work that needs to be wrapped up piling up my to-do list. Still, I am going to rejoice in the tying together of loose ends, snatched times to self over the next few days and simply, the checking of items from the list that will thankfully happen. I am going to run back to that list but I had to leave you with this gem of a cake made with the season's blushing favorite, Rhubarb!

Oat + Seed Strength Bars with Maple + Chocolate
There is science behind these bars. Maple syrup as sweetener is nature's very own nutritive element. The oats and seeds are high in protein and slow release of energy, not to forget the good fats. Goji berries for more anti-oxidant protection. And, then there is the inevitable chocolate. Let's face it; chocolate makes everything good for you!
Every diminutive bar packs the energy needed for a long day, a good workout or something to just keep you going while you hammer out yet another report on the current state of affairs at work. Every bit of that energy you need to run behind your toddler, deal with teenage troubles, listen empathetically to your significant other or friend, all while still trying to decompress from your own day.
