Smoky Honey Salsa

There is so much glory in colors! Summer is a riot is so many ways - an abundance of nourishment for the body and soul. This season reminds you to be happy to be alive; to look around and take joy in the simple stuff that are so glorious.

What I really love about this time of the year is how easy it is make yourself happy! I mean, look at today's star. There isn't a lot going on here; a plump tomato, a small onion, some lemon juice and some smoky chili flakes. In that is a world of joy enveloped in a bowl and surrounded by crunchy goodness.

Friday evenings sorted! One of my favorite fruit of the season is a ripe, red tomato. Yes, not the fancy stone fruits or other cool scapes and stuff that temperamentally walk down the market runway. Just the good old dependable tomato. Because there is none more versatile that juicy red temptress!

One evening, I decided to chill with a bottle of crisp Portugese white and a big bowl of salsa and chips. It was very satisfying. The leftover salsa made for a great omelette topping the next day! So, here is to simple answers to difficult lives....

Make yourself some salsa, pour yourself a big glass of something and relax!


Honey Chipotle Salsa

1 big, ripe beef steak tomato, diced small

1/2 medium red onion, diced fine

1 tsp chipotle chilli flakes

2 tsp lemon juice

1 tsp honey

salt to taste

Whisk together the honey, salt and lemon juice.

Add the ripe tomato and onion into a bowl. Sprinkle the chilli flakes on top.

Pour the honey mix over this and gently combine.

Let it sit for 5-10 minutes for the seasoning to flavor. Some water will separate.

I like to leave that as is as I like to scoop a bit of liquid with the chips. If you prefer your salsa drier, strain the mix and transfer the salsa to a bowl to serve.

Reserve the liquid for cooking, it makes a great sauce.
