EAT IRELAND

DID YOU EVER EAT COLCANNON, MADE FROM LOVELY PICKLED CREAM?
WITH THE GREENS AND SCALLIONS MINGLED LIKE A PICTURE IN A DREAM.
DID YOU EVER MAKE A HOLE ON TOP TO HOLD THE MELTING FLAKE
OF THE CREAMY, FLAVOURED BUTTER THAT YOUR MOTHER USED TO MAKE?

YES YOU DID, SO YOU DID, SO DID HE AND SO DID I.
AND THE MORE I THINK ABOUT IT SURE THE NEARER I'M TO CRY.
OH, WASN'T IT THE HAPPY DAYS WHEN TROUBLES WE HAD NOT,
AND OUR MOTHERS MADE COLCANNON IN THE LITTLE SKILLET POT.

CHEDDAR & CHILI SCONES

The scones are soft yet crumbly, a teaser on the palate with the melted flecks of cheese and the hint of spice at the back. A perfect warmer for Early Spring.

To twist out of the traditional dishes but yet embrace the warmth of the flavors of the cuisine, I often incorporate the basics into an international dish. Like this one.

The Irish Shepherd’s Pie, that I honestly prefer, has a lot of finely diced vegetables mixed in (for economic reasons obviously). And, now my Indian version takes that up another notch and go all out vegetarian!

IRISH SODA SCONES

there is also this thing Ireland has with cabbage. I don't know if you can call it love, but, it is prolific. The scone and cabbage seemed to gel, what with them having made the deal already, it seeems!
