A Green Odyssey
Have you ever seen spinach roots?
I caressed them, fondled them and took lots of photographs that I plastered all over social media. I mean spinach with roots! That's got to be sensational right? Well, in this day of instant gratification/feedback/silent-denial, I was categorically told that my crush was bizarrely unique and entirely uncaptivating for the general populace. Not one to go down quietly, I decided, I will prove to the world that my infatuation was really true love; the kind that is so deep and genuine that I am willing to suffer for it as a consequence!
I still think it was a brilliant idea!

Comfort Coddle
What is the dish that you crave on a cold, blustery Winter morning?
Me? I like a good egg with runny yolk, creamy polenta and some spice. Give me that and I am a content woman {note to sig. other. ha!}. It is the simple things that make a world of difference to me. In that I can be rather finicky. The polenta has to be creamy but not runny. The egg soft with fully cooked whites but not crispy anywhere. And, certainly, a delicately raw yolk that separates itself in a quick stroke from the cooked white self-ramekin.
Anyway, now that I have gone on about the perfect consistency that turns a frown into a smile, you must want to know how to. Well, the secret for both the egg and the corn is ........!
Curried Chicken Cornbread Casserole
You can make this for your Thanksgiving table or as a way to make the most of the leftovers! Cornbread and poultry are the leading stars of the dish and everything else is simply surround sound for their tango music!
Roast Cauliflower and Fennel Soup
I wanted to leave you with a warming, flavorful Cauliflower and Fennel Soup to keep you nourished for the week. For vegans or even if you are not, this makes a great replacement to cream of broccoli soup. With all the rich creaminess of the latter, it packs home the full punch of vegetable strength without the distraction of the cream.
I really like serving this soup with pickled vegetables; the acidity breaking into the creaminess and awakening your palate. You can find the recipe for Rosemary and Garlic Preserved Zucchini here.
Sweet Potato Jacket Tacos
Fall beckons.
The leaves are turning, the air is ever so slightly brisk. A subtle rustle that you always hear now; that of the fallen leaves dancing on the pavement in tune with the crisp wind, a swish, a sway, a seduction...
For me, making the most of this time is particularly imperative, as soon, there will be Halloween. And, as much as it is a fun time, it clutters up this whole gathering of wool in the Fall experience. So, I have from the beginning of October (or if I am lucky, late September) to the 3rd week of the month to revel in this favorite season of mine. You can see, why it is all the more special! :)
And then, I came up with this dish! Sweet Potato Jacket Tacos.... Take that! Oh! and in the spirit of the season, a Pear Salsa. And then some garlicky kale. Also, did I mention Pomegranate? Yes, that too....
