Winter Break
I am going to unplug for the rest of 2016. To reflect on the many amazing, insightful, mind-opening, trying, strengthening experiences I have had this year. A year in which, I lived in so many places, so many different lives, reinventing myself literally every 2 months. A year when I pushed myself beyond my comfort zone, but, yet to understand where that has taken me because I have not had the time to process. So, I am going away from the internet world for the last week of 2016... To bury myself in books and thoughts and come out refreshed in 2017!
But, I will leave you something to munch on of course... :)

Mondays to Sundays - Coconut Almond and Oat Waffles
Sundays have a symbolism. Probably different for different people but typically run along the lines of leisure, fun, family, connection, laid back, indulgent, happy.... you get the gist.
These waffles basically encapsulate all of those lovely feelings! So, you can essentially, insert a few minutes of Sunday into any day of your life!
Even better, they are completely gluten free and even the nittiest gluten lover will find little to be picky about it! Crisp on the outside and chewy in the center, they are lovely as Fall sets in...

Savory Waffles with Red Millet and Einkorn Flours
Savory waffles are a delight!
I didn't know how many people stood with me on that until I saw how popular this post from my last weekend was on my Instagram! Thank you for telling me what you love and that it something I made. It is always such a joy when something hits the mark, especially so with food. Having a hugely liked post on Instagram, where I post my every day eats, is like you came to dinner and said "I would really like to take the leftovers home and can you pack in the recipe as well please!"
I feel all glowy inside and to think that you and I share this common opinion of a dish that I am particularly partial to makes it so much more special! Ok, I'll stop gushing and give you the recipe already.
A Waffle Concept and Savory Turmeric Toasted Chickpea and Squash Waffles
You see, if you are gluten free or simply wheat allergic, like me, it is absolute pain in the ass to find bread substitutes that are fluffy, light and do not taste like card board because the US still has not caught with gluten free baking as much as our friends across the Atlantic. In comes, the savior, the humble waffle maker.
I have been testing a few flavors and this one today made with chickpea flour and incorporating roasted squash was perhaps one of the tougher one for the little fella to work through. But, eventually, I figured it out and all was sunny.
So, that is my waffle concept - an alternative bread......
