Fall In Love Tomato Soup

TOMATO SOUP FOR THE SOUL :

The ease of this recipe beguiles the flavor of the dish; it’s beauty lies in the elegant simplicity of a long roast!

The weather has decidedly turned cooler and I am loving it. Fall is my favorite season. I picked my last harvest last week and I was struck by how the tomatoes were still lush on the vines even as the plants themselves are coming to the end of their lives. As the colors on the trees turn hues of yellows, oranges and reds, I find myself walking between shriveling vines and ripening squashes and vegetables that stand out in clarity. It is a poignant vision.

Two Bean Chicken Casserole

This casserole, is simply layers of love - from the richly browned and crisped chicken thighs, to the caramelized mushrooms, the depth of sage and the richness of a double bean stew. Pour yourself a glass of crisp white, because it is that kind of saucy indulgence - cold wine, warm belly!

Time for Soup! Broccoli and Sweet Potato with Cheddar Sour Cream

Cream of broccoli soup has a particular special place in my heart. I did not grow up eating soups and my first soup like dish was a ramen, which, is not the same as the creamy soups of the Western half of the world. The first time I had ‘soup’ soup was when I moved to NYC, in the company cafeteria, on a cold Winter day - Cream of Broccoli. It was cream of broccoli. It was delicious. Mass-made and self-served with packet oyster crackers, yet delicious! And, I distinctly remember wondering how they creamed broccoli! LOL.

Celeriac and Parsley Root Soup

This soup is a celebration of parts of a plant that is familiar yet not used in main stream. Celery stalks are often consumed as are the leaves of the parsley plant. However, the roots of both are not only edible but also full of nutrients while exuding milder notes of the familiar flavors.

Winter... Soup and Snowstorms

I spent the day reading and souping for lunch. I made a softly spicy soup with charred poblano and jalapeno peppers and then tossed in celeriac cooked in orange juice and rutabaga, rounding it off with lots of cream and a creamy, caramelly Dutch aged Gouda. It has just a little hint of spice from the charred jalapeno that makes it warm all the way inside you. And, the rest of it is just creamy, healthy, vegetable, Winter goodness!

It is perfect! :)
