There you have it! That’s the gist of this post.
You see I feel the cranberry is very underrated red fruit. So, I am resurrecting its glory in these scones and making it the centerpiece of my day! Now, the thing about them is they are indeed hard to love. There is an acid tartness to them that you either fall head first for, or, decide there are easier fruit to lust after. But, if you look at the whole package and beyond the cutting first taste and look how it melts and loses its hard exterior to become a soft, succulent package with just a little love (and heat), you can truly appreciate it’s worth.
Time for Soup! Broccoli and Sweet Potato with Cheddar Sour Cream
Cream of broccoli soup has a particular special place in my heart. I did not grow up eating soups and my first soup like dish was a ramen, which, is not the same as the creamy soups of the Western half of the world. The first time I had ‘soup’ soup was when I moved to NYC, in the company cafeteria, on a cold Winter day - Cream of Broccoli. It was cream of broccoli. It was delicious. Mass-made and self-served with packet oyster crackers, yet delicious! And, I distinctly remember wondering how they creamed broccoli! LOL.

These scones were one of the few things I actually thought about and baked in my kitchen. And, then, actually shot. So, here we are, as the festive season comes running up to us..
Chilli and Irish Cheddar Scones
These scones are made with part Einkorn and part gluten free blend of flours. The recipe I used is in the British fashion where room temperature fat is used and in this case, I used lard instead of butter for flavor as well as texture. Unexpected as it sounds, lard gives pastry a better lift as its melting point is much lower than butter and it 'steams' a lot faster. For flavor, I went with simple pantry items like cheese and chili. I always keep a decent Irish cheddar on hand. As humble as the cheese comes across it is a great one for use either in cooking (oh! Béchamel sauce) as much as a cheese plate....
