Roast Cauliflower and Fennel Soup
I wanted to leave you with a warming, flavorful Cauliflower and Fennel Soup to keep you nourished for the week. For vegans or even if you are not, this makes a great replacement to cream of broccoli soup. With all the rich creaminess of the latter, it packs home the full punch of vegetable strength without the distraction of the cream.

Cauliflower Fried Rice
No, this is not another recipe for the new trend of crushing cauliflower to make rice because of Paleo or some grain free diet. This is really rice with cauliflower.
This idea was borne out of a nagging conscience. I am as you know deeply involved in making conscious eating choices. After all that is the entire premise of NOURISHED and FOODLY. However, I am not a saint. I do waste food and throw away leftovers sometimes because they have been languishing at the back of the fridge for far too long and because I had a new idea for a recipe that required a completely different set of ingredients. Yes, I am not perfect.
Nevertheless, in a effort to govern myself, I decided that I would not let anything go to waste, ok, really, atleast reduce my waste by half. I would make something with the leftovers and what else was available in my pantry and fridge....
Turmeric Roasted Cauliflower Salad
I have been playing (a lot) with recipes and seasonal ingredients. And, the fridge is chock full at the moment and everyday is a new recipe and more lunches and dinners prepped for later. I love a full fridge! It makes me feel so much more optimistic about life. I am eating healthy, filling and super tasty meals. Interestingly, many of them are just vegetarian; No meat/dairy/fish/grains at all. Yet, they are proper mains, and not sides.
Often, I have heard that vegetables do not have protein or you need to add cheese or an egg atleast to fill the protein quota for a balanced meal. Actually, vegetables do have protein in them. They are just not the most efficient source of them. So, essentially you need to eat a lot of vegetables to get the same amount of protein needed. Also, you are not a strict vegetarian, and working out or in a cold place, you may actively crave more protein packed foods because you can absorb the nutrients faster with less. Nevertheless, eating more vegetables is never a bad thing.
Like a whole head of cauliflower in a salad for two. Splendid idea!
